🤨 “Smashburgs”…?

 



I’ve been seeing my fellow stubfart grillers doing these and I dunno what to think about ‘em. Any of you guys do them? 

I’m on a heavy duty cast iron charcoal hibachi type BBQ and wonder how well it would work with a griddle? Is it even worth trying? It kinda strikes me as a shabby, quick n’ dirty way to do burgs. I like to make the big patties with a bit of egg and cracker crumbs and slowly grill them. I haven’t done much BBQing this summer and I need to jump on that because the way time flies around here, it won’t be long until the snow flies!

  1. Smashburgers are the new hotness out there for youtubers and tiktok grillers. Basically it tries to replicate fast food burgers from before they all switched to frozen pre-made patties. So your typical 1950's style in-n-out burger. I've done them a time or two on my propane griddle. Eh. Not bad, but more fast food style than I care for.

    Please note that true gourmet burgers still use the tried and true thick patty that's cooked medium rare with various additions on top - grilled onions and peppers, mushrooms and swiss cheese, bacon and cheese, etc. If I'm going for really good burgers, I stick with the thick patties and fry up a large package of bacon, then sautee onions in the bacon grease, then slather cheese all over it.

    Go ahead and try smashburgers once or twice, but don't be afraid to go back to what really works for you. Also, not sure if a charcoal setup can get the griddle hot enough for that style. Maybe use a cast iron skillet on your stove instead.

    As my brother always says, it'll make a turd either way.

  2. Had a Lodge cast Iron one. Use it to cook bacon and eggs for the group. Worked great. Had to down size and gave it to the son in law. Damn!

  4. I prefer my burgers to be grilled, some flame impingement on the meat. A solid metal plate? May as well make it in a frypan.

    1. After frying the hamburger patty in the skillet, remove the meat, put some chopped onions in the grease until cooked. Then add some flour, give it a few minutes, add water to make gravy, then add the meat back. Then serve with mashed potatoes. That one meal constituted about 75% of what I ate growing up.

  5. I don't. Burgers are ground beef, bread crumbs, and diced onion. Seasoned with salt and pepper, and either pan fried or grilled alongside the ubiquitous tube steak, served up in a bun and run it through the garden. Sides of chips, macaroni, potato salad, whatever you could get. Excellent!
